1. Combine the following ingredients in a medium mixing bowl: 1 ½ lb. ground beef; 2 cups breadcrumbs; ½ cup chopped onion; ¼ cup chopped green pepper; 1 ½ teaspoons salt; 1 egg and ½ cup ketchup. Mix well and pat evenly into 9×5-inch glass baking dish.
2. In a separate bowl mix ½ cup ketchup, ¼ cup chili sauce, 2 tablespoons brown sugar, 1 tablespoon lemon juice, 1 teaspoon dry mustard, and 1 teaspoon Worcestershire sauce. Mix well and brush top of meatloaf with mixture. Can also top with ketchup only.
3. Microwave for 25 to 35 minutes on Med. High (Roast) or until well done in center (about 140 degrees). Pour off liquid and let stand, covered with foil for about 5 minutes before serving.
This is my grandma’s meatloaf recipe that she got from an old microwave cookbook and tweaked it a bit. She makes it every time I go home to Kentucky for a visit and when I make it, my house smells like Grandma’s!
